By popular request, here is the recipe for my pumpkin cookies. Well not "my" recipe. I didn't come up with it. But you get the point.
1 cup butter
1/2 cup sugar
1/2 cup brown sugar
Beat ingredients well.
1 egg
1 cup pumpkin
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1/4 tsp salt
Combine all ingredients from above. Use tablespoon to scoop out cookie dough onto cookie sheet. Bake at 350 degrees for about 10 minutes.
Now for the even yummier part....the caramel frosting!!!
1/4 cup butter
1/2 cup brown sugar
Melt on stove, boil for one minute.
1/4 cup milk
2-3 cups powdered sugar
Combine all 4 ingredients and frost pumpkin cookies.
Enjoy!
